Cinnamon Roasted Almonds


Whenever I go to any sort of festival, sporting event, or fair, I immediately head towards the roasted almonds stand.

These little guys are absolutely delicious, and I've been searching for a good recipe for them for a looong time. They always seem to turn out too bland or have way too much spice.

I've finally gotten this one down, and let me tell you, it's pretty scrumptious and super easy as well!

An added bonus: your house will smell amazing as they bake.

Ingredients:

2 Egg Whites
2 Tbsp Vanilla Extract
4 Cups Whole, Raw Almonds
1/3 Cup Sugar
1/3 Cup Packed Brown Sugar
1 tsp Salt
1/2 tsp Ground Cinnamon

Directions:

Preheat the oven to 300 degrees.

In a large bowl, beat the egg whites until they are frothy and then beat in the vanilla. 

Add the almonds and stir to coat them all evenly.

In a separate bowl, combine the sugar, brown sugar, salt, and cinnamon.

Add the dry mixture to the almonds and stir to coat.

Spread evenly onto greased baking pans.

Bake for about thirty minutes, stirring once while baking.

Let cool, and try not to eat them all in one sitting.
