Last Week...

Warning - this may be the longest weekly post of all time. Make sure you've got at least a few minutes, because we were super busy, and there are tons of videos to enjoy! ...Charley showed off her new big girl teeth: (Lashes for dayssss) ...Daddy and Gracie played in Charley's baby gym with her: ...Tuesday morning at about 2am, Grace woke up puking all over the bed (it took me three loads of laundry to wash the sheets, comforter, blankets, and pillows...so much fun!) . Isaac and I started feeling sick soon after. We both took the day off and the whole family lounged around feeling miserable. We kept a bowl nearby in case Grace lost it again. Luckily, Isaac got better pretty quick and Charley never got it. I felt better and went back to work Wednesday, but got even sicker on Thursday. I took another day off, and the girls were in school, so I was able to get some much needed rest. Thankfully, we were all better by Friday. The flu is never fun, but it'...

Cinnamon Roasted Almonds

Whenever I go to any sort of festival, sporting event, or fair, I immediately head towards the roasted almonds stand. These little guys are absolutely delicious, and I've been searching for a good recipe for them for a looong time. They always seem to turn out too bland or have way too much spice. I've finally gotten this one down, and let me tell you, it's pretty scrumptious and super easy as well! An added bonus: your house will smell amazing as they bake. Ingredients : 2 Egg Whites 2 Tbsp Vanilla Extract 4 Cups Whole, Raw Almonds 1/3 Cup Sugar 1/3 Cup Packed Brown Sugar 1 tsp Salt 1/2 tsp Ground Cinnamon Directions : Preheat the oven to 300 degrees. In a large bowl, beat the egg whites until they are frothy and then beat in the vanilla.  Add the almonds and stir to coat them all evenly. Fettuccine Carbonara

Finally, the recipe you've all been waiting for. We make this dish ALL the time. Anytime it's a special occasion, whenever we are hosting guests, and just for dinner during the week. It's super easy and amazingly delicious. Ingredients: 2 boneless, skinless chicken breasts salt pepper 18 oz. fettuccine 1 oz. butter 3 oz. prosciutto, chopped into small pieces 1 garlic clove, minced 16 oz. heavy cream 4 oz parmesan, grated 1/4 tsp white pepper 2 egg yolks 1 french baguette, cut into 1/2" thick slices extra virgin olive oil dried parsley Directions: Boil water to cook the fettuccine per the directions on the box. (I like to add about 1/2 tsp of salt and 2 tsp of olive oil to the water so the pasta doesn't stick together.) Heat your grill for the chicken and season it with salt and pepper. Day Thirteen - My Favorite Cake Recipe

Better-Than-Almost-Anything Cake: (recipe from Betty Crocker) Ingredients: 1 box Betty Crocker Super Moist German chocolate cake mix Water, vegetable oil, and eggs called for on cake mix box 1 can (14 oz) sweetened condensed milk 1 jar (16 to 17 oz) fudge topping 1 container (8 oz) Cool Whip topping 1 bag (8 oz) toffee chips Directions: Heat oven to 350 degrees (325 for dark or non-stick pan). Bake cake as directed on box for 13" x 9" pan. Poke top of warm cake every 1/2 inch with handle of wooden spoon. Drizzle milk evenly over top of cake; let stand until milk has absorbed into cake. Drizzle with fudge topping. Run knife around sides of pan to loosen cake. Cover and refrigerate about two hours or until chilled. Spread Cool Whip over top of cake. Sprinkle with toffee chips. Enjoy the most delicious, amazing cake EVER! (Store covered in refrigerator.)

Stuffed Mushrooms

Ingredients : 1 roll Jimmy Dean Original Pork Sausage 12 ounces Philadelphia Cream Cheese (room temperature) 20 whole white mushrooms Plain Breadcrumbs Directions : Preheat the oven to 350 degrees. Brown sausage in skillet and transfer to medium mixing bowl. Set aside. Clean mushrooms and remove stems (use a small spoon to scoop out inside if stem does not break cleanly). Mix cream cheese with sausage and add bread crumbs until the texture is to your liking. Fill mushrooms with mixture and place in cake pan. Bake at 350 degrees for 20-25 minutes until mushrooms are cooked and mixture has browned. Enjoy!
